Santa Margherita Winery was founded in 1935 in the countryside of Italy’s Veneto region, where founder Gaetano Marzotto named the winery after his beloved wife. The History of TequilaThe Aztecs first used the agave plant to make a drink called pulque. This drink was made by fermenting the sap of the agave plant, and it was used for religious and ceremonial purposes. When the Spanish conquistadors arrived in Mexico, they began to make their own version of pulque, which they called mezcal. Mezcal was made with the same agave sap, but it was distilled, and it quickly became popular among the Spanish settlers. Tequila was first produced in the 16th century in the town of Tequila, which is located in the state of Jalisco. The first tequila distillery was built by the Marquis of Altamira. Tequila was originally made with a type of agave known as Blue Weber Agave (agave azul). This variety of agave is still used to make tequila today. How is Tequila Crafted Tequila is a distilled beverage made from the blue agave plant. The drink is typically composed of 40% – 60% alcohol by volume (80 – 120 proof) and is made in Mexico. Tequila is made from the heart of the agave plant, which is called the piña. The piña is roasted above-ground in an oven and then shredded or grounded into a pulp. Then, the pulp is mixed with water and yeast and fermented in large vats for two to three weeks. After fermentation, the mixture is distilled two or three times to produce the final product. DO YOU KNOW THE DIFFERENCE BETWEEN PROSECCO AND CHAMPAGNE?

The names of these two types of sparkling wine often are used interchangeably, these styles of wine are in fact distinct from each other in a number of significant ways. This is what to know when choosing Prosecco vs. Champagne. WHAT IS PROSECCO? Prosecco is a type of sparkling wine crafted only in the Veneto region of Italy. The main grape used in prosecco production is glera, which must compose a minimum of 85% of the wine. Prosecco is made via the Charmat method, otherwise known as the tank method, in which the wine undergoes a secondary fermentation in a pressurized vat to create its bubbles.  On the palate, prosecco is bright and fresh, and it is generally best consumed within the first few years after it’s made. Most Prosecco is bottled young and as a non-vintage wine, which is to say, they are made from blends of base wines from multiple years. WHAT IS CHAMPAGNE? Champagne is a style of sparkling wine made in the Champagne region of north-eastern France. The main grapes of the region are chardonnay, pinot noir, and pinot meunier; a handful of lesser-known varieties are also permitted, though these are rarely used.  To achieve its bubbles, Champagne is produced via the “traditional” method, otherwise known as the méthode champenoise, which involves allowing the wine to undergo a secondary fermentation in the bottle. The wine then ages for a minimum of 12 months on the lees in the bottle, which adds texture, complexity, and toasty notes.  WHAT ARE THE BIGGEST DIFFERENCES BETWEEN PROSECCO AND CHAMPAGNE? The most significant differences between Prosecco and Champagne are that they are made in different countries and use different grapes and production methods. These factors also cause them to taste quite different from each other, and they have different textures as well.  Also sparkling wines made via the Charmat method, as Prosecco is, tend to have bigger bubbles, whereas traditional-method sparklers, such as Champagne wine have finer ones. Therefore, for something with more complexity and elegance, or if you want to cellar a bottle to revisit it down the line, Champagne should be excellent choice.  For fruit-forward, budget-friendly bottles to drink in the near future, Prosecco should be your bubbly of excellent choice. PERFECT DRINKING TEMPERATURE FOR WINE

The temperature of the wine greatly affects the taste of the wine. Wines stored at the right temperature are pleasant to taste, but wines stored at temperatures that are too hot or too cold may not fully experience the wine’s complex flavors. White wine stored at room temperature is fine to drink, but in some ways it does not feel pleasant. This is because the acidity, which brings out the exquisite aromas and different level of flavors found in white wine, increases at colder temperatures. On the other hand, white wine that is too cold is tasteless and watery. Therefore, it is important to find the temperature balance. There is no set temperature for chilling white wine and it depends a lot on the style and type of wine. Sparkling wines, Rosé wines and white wines with a dry texture need to be chilled to bring out the fruity flavors and rich aromas, and it is recommended to store these wines at a temperature of 4-5 degrees Celsius. Wines with high acidity such as Riesling maintain their balance and freshness at 7-8 Celsius, while white wines such as Chardonnay have a denser structure, so keep them at 8-10C to maintain that rich, buttery texture. In comparison with white wine, there is a perception that red wine does not need to be cooled and need to be served in room temperature. However, red wine has a relatively high alcohol content, and if drunk too warm, it can cause a burning sensation in the throat, similar to whiskey. Higher acidity wines such as Cabernet Sauvignon can be stored at slightly warmer temperatures than lighter structured wines such as Pinot Noir. Serve full-bodied red wines, such as Syrah at 15-18 Celsius, while a light-bodied, fruity red benefit from a cooler temperature and should be stored at 12-15 Celsius, or slightly cooler. Don’t forget that the main essence of the culture of drinking wine is not to follow the rules exactly, but to enjoy the wonderful feeling and emotional pleasure that you experience in the moment of drinking your favorite wine. If you want to experience the delicate, complex taste and exquisite aroma of wine every time you drink it, you just need to keep it at the right temperature.

In recent years, the world has entered a new era in which countries are paying more attention to environmental threats, such as climate change, ecological balance and the threat of depletion of natural resources. Following this phenomenon, it is also possible to make cocktails we love to sip on in an environmentally friendly way. It is a misconception to think that eco-friendly cocktails are low in ingredients and taste bad with a variety of substitutes. One of the easiest ways to become more sustainable in cocktail making is to use your ingredients to their full potential. One should take the zero-waste approach to creating cocktails.  Flor de Caña brand ambassador, winner of the 2017 World Class Champion and the best bartender in Taiwan Mr. Peter Lin visited Mongolia to guest shift at four different restaurants and bars with their own unique image. He shared his experience in making zero-waste cocktails, organized trainings with fellow bartenders and VIP product tasting events to introduce sustainably produced rum Flor de Caña. We would like to share a few tips we learned from his visitation. For mixologists here are a few hacks that can be explored: OUR LITTLE GARDEN Many bartenders across the globe have started to create small herb gardens and edible flowers in their work area. It’s a great benefit growing one’s ingredients; not only will this cut down on potential packaging waste, but it will also offer a fresh product to customers, which in turn increases taste and quality. GRIND, GRATE AND REPEAT One of the easiest ways to become more sustainable in cocktail making is to use your ingredients to their full potential – taking a zero-waste approach to creating cocktails. Citrus fruit rind is for example used for cocktail decorations in many ways. ALL DRIED OUT Dehydrated fruit is ideal for making garnishes. The process can significantly increase the shelf life of perishable fruits and reduce the amount of food waste from your venue as a result. Just be cautious of using non-energy efficient equipment to dehydrate. Instead, you can sun-dry the fruits.  SWITCH OUT STRAWS The trouble of most straws are single-use plastics are non-degradable waste after use, so it is great idea to offer a straw made of environmentally friendly materials such as paper and wood.

JACK DANIEL’S TENNESSEE WHISKEY – JACKTEMBER

Jack Daniel’s. There are many interesting stories and historical facts behind this simple name, which we already heard before, and here are some short stories we prepared for you.   Jack Daniel’s Distillery founder’s real name was actually Jasper Newton Daniel. However, his family and close friends used to call him Jack, so he became famous all over the world by this name. Jack Daniel’s Distillery is the first officially registered whiskey distillery in the United States of America. Since 1866, Jack Daniel’s whiskeys reached whiskey aficionados all over the world without losing its good taste, unique quality, wonderful aroma and color guaranteed by the founder’s secret recipe that is passed down the generations: the old-fashioned factory process, tasting and, especially, the main ingredient which is Cave Spring Hollow spring water. In fact, this spring water was one of the secrets of the main recipe. Due to the limestone layer of the cave, it enriches the water with various minerals, while also removing the Ferrum (iron) from the water, which should not be in a whiskey. Each Jack Daniel’s Tennessee whiskey carries the 150 years history with it. It is filtered drop by drop from this amazing cave and is well-aged in a fresh oak hand-made barrel. Cave Spring Hollow, an incredible natural formation in Lynchburg, spring water draws 3 tons of fresh water per minute from groundwater and has a constant temperature of 13 degrees and an extraordinary clarity. Jasper Newton Daniel bought the whole valley including Cave Spring Hollow for $2,148, which was incredibly expensive at the time, and the locals were puzzled by the purchase of a seemingly ‘ordinary’ spring water. Many historical facts swirled about Jack Daniel’s life, but interestingly the exact date of his birth is still uncertain. There are many hypotheses that he was born in September 1850, September 1846, or in January 1849. Therefore, the entire month of September has been celebrated as “Jacktember” to commemorate the birth of the Jack Daniel’s founder. Jacktember is celebrated all over the world for a month-long festivities such as cocktail competitions, artist networking, arts and culture events, Jack Daniel’s culture days, personal birthdays, parties and other community events. “MSM Betastar” LLC is the official distributor of Jack Daniel’s in Mongolia and organizes the “Jacktember” event throughout the country every year in September.
